Avoid Defeat Options

If I use any version of Force Alchemy on a character with Avoid Defeat, do they still get the Avoid Defeat Save?

What if I kill someone with a Rakghoul? Do they get the save or just become a Rakghoul?

If yes, are there any other abilities that may get around AD that doesn't specifically state it n the card?

In both situations, the opposing character would get their avoid defeat saves. If successful, then they are not defeated, remain on the board, and you would not place a new miniature on the board.

If something removes a character from the board, like Tactics Broker or Transfer Essence, the character being removed cannot use Avoid Defeat.

Amphistaff prevents Avoid Defeat (and says so). I can't think of anything else that does, given where it falls in the effects chain. Avoid Defeat is not a response to an attack or ability, so most/all other stuff (Overwhelming X, Suppressive Fire etc) doesn't apply.
