Yet another stacking question.

If a unique follower is affected by GMY's CE, getting the +3 attack (and +3 defense), and at the end of the Snowbunny's turn, she has said unique follower attack, the +4 attack bonus from her would not add to, but would overide GMY's bonus, correct?

The character would just be attacking at +4 instead of +7, because both of them involve direct bonuses to the stat in question.

I'm pretty sure that's how it works, but for some reason, I keep looking at Padme's CE as a "Cannon" one, and think that the entirety of the effect gets applied. I'm just trying to remove the last nagging bit of doubt.

Padme's and Yoda's CEs are both direct bonuses to a stat and thus do not stack. If they are both in effect, you would take the higher bonus.
