How can R2-D2, Astromech Droid do both Tow Cable AND Override in the same turn, when the Tow Cable replaces turn?? Can someone please explain this to me, because it seems to contradict itself. Thanks.

Because even if you you replace R2's normal turn actions (move/attack), he is still taking a turn, and End of turn actions still occur. Override happens during this, along with resolving doors.

he gets +10 damage against adjacent, non-living characters. he has a base attack of +8. against adjacent non-living enemies he can make an attack at +8 for 10 damage.

Can R2 move adjecent to a door, which will then open end of turn, and then use override to open a door beyond the 1st door?

Yes....because they are both end of turn abilities.

To add to what Zalkrie said, you determine the order at which these 'end of turn' events occur.
