The difference is that 'carbonite' is a word that was in use in the english language prior to its use in Star Wars. It's a kind of explosive.

Actually, it's not by modern naming standards, which is where you get most of the element + '-ite' names. The '-ite' implies a compound with oxygen.

Pencil lead, aka graphite, is pure carbon with no oxygen. The name graphite precedes modern naming conventions and is derived from a Greek word meaning 'writing' or 'drawing'.

Graphite is the most stable form of pure graphite, so no boom. It doesn't even burn easily.

So heres what we do, we get a bunch of pencil lead, melt it, and put someone in it, and then freeze it with them inside. Voile! Han Solo is here.
