If there is an ally between the Melee reach 2 piece and the enemy piece, does the enemy gain cover from the middle piece? I assume no because the rule book says to treat this distance WHILE ATTACKING as if they were ADJACENT. But sometimes there are loop holes in the rules so I thought I would ask.

Your interpretation is correct, the enemy does not gain a cover bonus.
