I enjoy the purity of Maul's predator nature. Few words, no arrogance or pretense just in-your-face aggression. He didnt pontificate, vascillate or whine he simply wanted to decapitate you. Pure predator. Sadly, this was largely ruined by Lucas writing and directing such a lame end for the character.

My favorite Sith in general was always Vader as the original Dark Lord of the Sith.
For gameplay purposes (which I think the OP is requesting), I'd have to go with Darth Bane as he was my first true powerhouse piece with NOTHING to challenge it for a couple of years (again, in my personal collection).
