You do know what Obi's Trial was, right? Killing Darth Maul. Anakin's experiences also allowed him to forgo the normal trials. It is well within the realm of possibility that Ahsoka will be knighted, especially if some of the books are to be believed that the Jedi begin to feel the losses and needs more Knights.

I think Ahsoka could be Knighted, but not by Anakin.

The concept of rushing Jedi training is not new. The Jedi pushed many children into battle for the Ruusan conflicts. It is entirely feasable that the padawans would be knighted sooner than usual. But, Ahsoka is a little young. She is younger than both Kenobi and Anakin were when they were knighted. Also, look at the padawans present at Jabiim. They were older than Ahsoka.
